Easy appetizer for the Summer
Easy peasy lemon... peachy! Every summer I have a favourite fruit. There are summers I just eat non stop mangoes, or summers my fridge is filled with cherries, but this year it is the very juicy and flavour bursting white peach that always ends up in my shopping basket.
When the days are sweltering hot you really don't want to cook a lot. This white peach salsa crostini is the perfect party starter or do like me, eat them all for lunch. Preferably under a parasol, homemade ice tea in one hand and a sassy tune playing in the background. Ah! Summer bliss!
1 white peach
1/2 (small) cucumber
1 spring onion
Fresh basil leaves (I used the decorative little basil leaves)
1/4 red chilli pepper
Fresh lime juice
Black pepper to taste
Chop the peaches (leave the skin on) and cucumber in small cubes and put them in a bowl. Thinly slice the white part of the spring onions and very finely chop the red chili pepper. Add to the bowl together with the basil leaves and fold everything together. Squeeze lime juice over it and put in the fridge to cool for a while.
Great topping on a goat's cheese crostini!
