Christmas appetizers (and also for New Year's Eve!)
Can't believe it is Christmas next weekend! The year is going full speed ahead now. I have been testing out some appetizers, because I think they are the most important part of the menu. I want them to wow and be delicious to set the tone for the rest of the evening. Extra bonus this year: they are super easy and very colorful!
Red beet blinis
Whizz boiled beetroot with creme fraiche in a food processor. Season with pepper and salt and chopped dill. Spoon a little bit on each blini and decorate with fish roe and a sprig of dill.
Cranberry and brie blinis
Add a thin brie slice on top of the blini and decorate with cranberry sauce and chopped walnut.
Beetroot and sweet potato tarts
Roll out puff pastry and prick with a fork. Thinly slice a peeled sweet potato and a boiled red beet and layer it over the pastry. Crumble feta cheese and a bit of thyme leaves over it, season with some freshly ground black pepper. Bake in the oven according to instructions on the puff pastry package. When you take it out of the oven I usually add some more crumbled feta cheese.
