Tastes of Autumn - Chicory and pear tart

Autumn is so yummy, mushrooms, pumpkins, parsnip and chicory, so many of my favourite veggies!

This chicory and pear tart is a winner, the perfect appetizer to start an autumn feast. Happy Sunday :)


Chicory and pear tart

2 pieces of chicory
1 shallot
oil
puff pastry
goat's cheese
1 pear (not too soft)
walnuts
fresh thyme

Clean the chicory: cut off the harder end and take out the core, cut each piece lengthwise into four parts.
Peel and chop the shallot. Heat a little bit of oil in a non-stick frying pan and cook the shallot and chicory pieces until they soften, make sure they don't burn.
Peel and core the pear and slice into thin pieces. Make sure the pear is not too soft otherwise your tart will be soggy ;) .
Heat the oven and line the baking sheets with parchment paper. Unroll the pastry sheets on top, trimming the edges neatly and prick the pastry with a fork a couple of times. Lay the softened chicory and shallots pieces over the pastry together with the pear slices? You can layers them nicely so when you cut it later each peace has a chicory and pear bit. Top with crumbled goat's cheese and walnuts.
Bake in the oven according to instructions on the puff pastry package. Every oven is different so always best to check that the pastry isn't burnt.
Take out of the oven and scatter some fresh thyme leaves and freshly ground pepper over it according to taste. Cut into pieces and tuck in!
