Pineapple salsa, add some spice and freshness to your homemade burgers

Homemade burgers, it has become a staple Friday evening dinner choices here in the house. Easy and yummy. I always try to add something extra to make it different each time. Why not try this delicious pineapple salsa as a tropical topping with a chickenburger?

Pineapple salsa

You need:
1 pineapple
1 red chilli pepper
1 lime
fresh coriander leaves
2-3 spring onions

Peel the pineapple and cut into small pieces, make sure there are no brown bits left on the pineapple pieces. If the core of the pineapple is too hard discard that too.
Slice a small red chilli pepper into very thin rings, I take the seeds out too because they are mega spicy
Transfer to bowl and add fresh coriander leaves, the red chillies and thinly sliced spring onions.
Add the lime juice and if you like to have a nice lime flavour, add some lime zest too. Toss all ingredients in the bowl, cover and put in the fridge for an hour so the flavours mix well.
