Tomato galette with goat's cheese, summer food!


Roll out puff pastry on a baking paper on a baking sheet and prick it a few times with a fork - it's a Monday evening, sorry I get puff pastry out of a packet...
Spread soft goat's cheese in the centre of the pastry and leave enough space at the border to fold later.
Decorate with artichoke hearts and multi-coloured cherry tomatoes sprinkle grated parmesan cheese and some fresh oregano leaves over it.
Fold the edges of the pastry over the tomatoes filling.
Bake in a pre-heated oven as instructed on the pastry package.
The last couple of minutes take it quickly out of the oven and sprinkle some pine nuts over it and then back in the oven - pine nuts burn very quickly so it only takes a short time!
