Gin tonic with thyme and strawberries

Summer is almost over and the cold wind brings a tear to our eyes. Let this summer gin recipe warm your soul and have a happy weekend!

Gin and tonic with strawberry and thyme infused syrup

Fresh thyme leaves
1 cup sugar
1 cup water

Wash and hull the strawberries. Cut into pieces. Put sugar and water in a small saucepan, simmer over a medium heat, stirring until the sugar is dissolved.  Add the strawberries and thyme leaves (only a very tiny amount, thyme can quickly feel too strong). Let it simmer further until the strawberries get soft. Take off the heat and leave to cool. Strain the syrup and discard the strawberries and thyme leaves. 
Pour a little bit of the strained syrup in a glass, add some gin and top up with the tonic. Give it a little stir and add an ice cube. Decorate with a slice of strawberry and a sprig of fresh thyme.
