Cold cucumber soup with Alpro coconut

I love the new Alpro coconut drink! I have been using it in smoothies and morning porridge, but also in this great summer soup.



Cold cucumber soup with Alpro coconut 

1 cucumber
1 ripe avocado
1 handful of fresh mint leaves
120 ml Alpro coconut
1 pinch of cayenne pepper
pistachio nuts (optional)

Cut a cucumber in small pieces, the cucumber needs to be cool so keep it in the fridge before cutting. Scoop the flesh out of an avocado and put this together with the cucumber pieces and a handful of fresh mint leaves in a blender. Add 120 ml of Alpro coconut and a tiny little bit of ground cayenne pepper (tiny!). Blend until smooth and serve cold. You can decorate with chopped pistachio nuts.
Great as a starter or to accompany a summer salad. I also like to serve this in small glasses as an appetizer at parties.
