Picnic wrap from the fabulous Green Kitchen Stories

I am so ready for sunny days! You too?

I always have a long list of recipes to try and this one had been on the list for a year now. The beetroot wraps from Green Kitchen Stories come from one of my favourite cookbooks from last year, full with great veggie and vegan recipes. The Green Kitchen Stories photos and recipes are always a great inspiration and I love their food videos too.

When the sun shines, you eat outside and there is nothing better than jump on your bike and cycle to the park for a picnic. These wraps are not only colourful but also very tasty: the orange zeste in the lentils mixed with the quinoa is a revelation (tip: make enough of this, it is great as a salad on its own too!)
