Hurray for watermelon salad

The summer officially starts next week, but I had a preview on my terrace yesterday: hurray for watermelon salad because it shouts SUMMER in big capitals!

It was the lovely Forest Feast and the great goats cheese I found in the Turkish grocery shop on the corner here who inspired me.

Just slice a not too thick piece of the watermelon and crumble the goat cheese over it. Decorate with rocket salad and fresh mint leaves. Sprinkle some chopped walnuts over it with a drizzle of a little balsamico vinegar. One last twist of the peppermill and your summer salad is ready, tuck in!
