Breakfast idea

Eggs for breakfast? It's the weekend, so I have a bit more time than just a quick jam sandwich. I have been craving this breakfast recently, because I am avocado's biggest fan. With a bit of freshly ground pepper and some sea salt, it is my weekend treat.
The bread is spelt bread, so happy I can find this at many bakeries in Antwerp now. It used to be only in specialised bio-shops. This one comes from Epicerie du Cirque, more about this lovely place coming soon.
